Traditional warm-weather drinks get a seasonal spin at some of North America’s top bars and restaurants.
Franklin Fizz at Distilled, New York
Inspiration: Gin Fizz “The fizz was designed to be consumed at breakfast as a hangover cure,” says Distilled bartender Benjamin Wood. “We use reposado tequila, which imparts some notes of caramel and vanilla, and Blue Point Toasted Lager as our effervescence. Franklin Fizz 2 dashes Fee Brothers Plum Bitters 1 egg white 3/4 oz fresh lime juice 1 1/2 oz white-grape syrup* 1 1/2 oz reposado tequila 2 oz Blue Point Toasted Lager Angostura bitters (3 to 5 drops for garnish)
Add plum bitters, egg white, lime juice, grape syrup, tequila and lager to a shaker with ice. Shake and pour unstrained into a Collins glass. Add Angostura bitters and serve.
*Press white grapes through a chinois or strainer. Discard skins. Add grape juice and equal parts granulated sugar to a pot. Heat, stirring occasionally, until sugar is dissolved. Chill before using.
