Caraccioli and its tasting room, which opened in 2011 as the third tasting room in Carmel-by-the-Sea, is best known for making a vintage méthode champenoise sparkling wine in brut and brut rosé. Both are composed of 60 percent Chardonnay and 40 percent Pinot Noir, the only other wines offered by the small outfit. A five-year lead time for release—from production to harvest—defines Caraccioli. Guests can customize a tasting by ordering flights ($12–$15), which may be accompanied by small bites of artisanal cheese, charcuterie or chocolates. Dolores St., btw.
