Schuchmann Wines Château sits on a hilltop overlooking Kisiskhevi, a village named after the delicate, peachy grape called kisi that once thrived in the area but nearly vanished due to Soviet-mandated collective farming. In Schuchmann’s tasting room, you have the rare treat of savoring a wine made entirely from this ancient variety, among other memorable sips including an herbaceous, inky saperavi and a graceful blanc de blancs that sees a second fermentation in the bottle, just like in Champagne.
