Lisbon: Leopold Reopens in the Palacio Belmonte

Lisbon's Palacio Belmonte, a stunning 15th-century palace-turned-hotel in the neighborhood of Alfamma, has hired chef Tiago Feio to helm its new, intimate 22-seat restaurant. Feio, who owned and ran the kitchen at the tiny, now-shuttered Leopold restaurant, has become well-known both for his hyper-local approach and his avoidance of traditional cooking methods: Rather than relying on an oven, he opts for raw and fermented preparations and uses only a hand torch as a heat source. The hotel's kitchen was formerly manned by Michelin-star chef José Avillez, who has since moved on to focus on his myriad other projects. They anticipate a mid- to late-November opening for the new, open kitchen–style space, also called Leopold, located across the small, cobblestone patio from the hotel's main entrance.
