Noma needs little introduction—it’s been unanimously regarded as a top restaurant worldwide for almost a decade—but since 2015, chef René Redzepi and his team have taken to the road in new ways, setting up shop in Japan (2015), Australia (2016), and now preparing for an opening in Tulum, Mexico for 2017. It’s not just a world tour, but an opportunity for the innovative locavore Redzepi and his chefs to play with ingredients from across the globe.
