Ruby

A mainstay on the World’s 50 Best Bars list since the speakeasy opened in 2007, Ruby is a must-visit for the stylish, international set—so much so that you might have to wait in line for 30 minutes just to get inside the door. But make it past the queue (or come armed with a reservation) and you'll find yourself in a timeless lounge done up in marble, leather, and brass with a crowd as handsome as the interiors. The drinks menu is based around classics and seasonal creations; on a recent visit, we sampled several (the unanimous group favorite was a tribute to the Benton’s Old Fashioned from PDT called “An Apple Falls in the Rum,” featuring Ron Zacapa, Danish apple syrup, and Angostura bitters souped up with spicy aquavit, served with a little crisp of seeded rye bread). We recommend asking the friendly bartenders to walk you through the lengthy list before settling into one of several cozy nooks found throughout the bar’s two floors and back patio.
