Ramen

Not your average Cup Noodles, ramen is an obsession in Japan. The secret is in the broth. Every shop has its own recipe, and there are dozens of regional variants. Diners may be asked to customize their noodles with an egg or vegetables (scallions, seaweed, and corn are common). Be warned: Popular shops, like Ichiran Nakasu (5-3-2 Nakasu, Hakata-ku) in Fukuoka, have lines and time limits.
