A brand-new 12-seater in Austin’s trendy South Congress Hotel, Otoko is chef Paul Qui’s take on omakase. The ticketed experience combines Tokyo-style sushi with the cooking style of Kyoto, dishing out items like bluefin tuna air-mailed from Japan and shishito pepper tempura with nopales (cacti), all with a seasonal bent. At around $150 a seat, it’s a pricier option for this laid-back Texan town, but that hardly seems to deter diners—tickets, available at the first of every month, sell out rapidly. 1603 South Congress Ave.; 512-920-6405; otokoaustin.com. —NB
