In a city where the caipirinha reigns supreme, it took British American Michael Graham to introduce paulistas to the martini. At East the master mixer pours some 20 versions of the drink, infusing them with passion fruit, green coconut, lemongrass, and pink basil. The kitchen turns out yet more innovations—the Korean bulgogi with manioc is excellent—cooked up by Helen Assunçao, who used to be at E&O in London. Dinner, $70.
