Recipe: The Mark Cocktail

While we wait for the Ritz Paris to reopen its doors next year, famed bartender Colin Peter Field of the Hemingway Bar shares five of his signature cocktail recipes to replicate at home.

Making the most of Bar Hemingway’s hiatus, Field has traveled the globe to take temporary stints behind some of the best bars the world over. In honor of his temporary take over of New York’s The Mark Restaurant by Jean-Georges, Field created this light, refreshing tequila drink: “Cucumber and tequila go together admirably well,” he says, “offering a fresh, fruity, but dry cocktail.”




1 oz tequila reposado, such as Calle 23
2 oz fresh cucumber juice
1 slice green apple, for garnish (Optional: dip half the apple slice in Hawaiian black salt or other fine salt)


Combine tequila and cucumber juice in a cocktail shaker over ice. Shake vigorously for 15 seconds; double strain into a Martini glass. Garnish with the apple slice.
