The minute you land in Oaxaca, make a reservation at this quiet, dim-lit tasting room. You’ll be taken through a flight of mezcals, all from microproducers who don’t otherwise distribute—or even bottle their spirit. The expressions on the back bar all bear the name of the bar: the owners have sourced their inventory directly from tiny mountain villages where the mezcal is made. Once you’ve been schooled on ancestral mezcal, you’ll have the opportunity to buy a bottle to smuggle home. 506 Reforma, Col. Centro; 52-951/514-0082; mezcaloteca.com.
