Summer is the season for grilling—certain foods just taste better seared outside. And once the mercury rises no one wants to turn on the kitchen stove. “For gas grills, it’s important to check “BTUs per square inch,” to determine how much heat a grill delivers, says Russ Faulk, chief designer and head of product at Kalamazoo Outdoor Gourmet. This is slightly different from total BTUs which Faulk says “is a pretty meaningless number.” Then there’s the weight. “Heavier is better when it comes to cooking,” says the expert. “Heavy grill grates, a heavy lid, and a heavy body/firebox will hold more heat and help with quicker searing.”
Randy Watson, grill master at BBQGuys, says if you’re buying a grill today it must have reliable temperature control. “Look for high-grade stainless steel or other solid and thick materials that retain heat, a well-designed system for drafting and airflow, and components like flame tamers or heat zone dividers that consistently spread heat throughout the grill body,” he says.
For shoppers wanting the latest technology, Watson says infrared grills are extremely popular. “They sear food with radiant, infrared heat, resulting in faster cook times as well as much juicier and more tender meat.” Another popular feature, and arguably the hottest trend for home grillers right now is Wi-Fi compatibility with pellet grills he says. “Essentially, a Wi-Fi controller turns a pellet grill into a smart grill capable of doing all the work for you,” says Watson. “In addition to maintaining precise temperatures, grills with this feature let you know exactly what’s going on under the hood by sending information and alerts to your smartphone. All you have to do is push a few buttons, and the grill will smoke a turkey for you, and hold it at an appropriate temperature while sending a notification to your phone.” And finally, it’s all about the add-ons. “People increasingly want to do more with their grills,” says Watson. “Today’s luxury grills are compatible with rear burners, rotisseries, pizza stones, and many other accessories that make just about any cooking style possible.”
