New York: Momofuku Noodle Bar
Perhaps the most modest restaurant ever to make any chef a star, David Chang’s innovative East Village noodle shop (its name means “lucky peach”) helped to fuel New York’s ramen boom. It’s easy to see why. Chang knows how to blend the intense flavors of rich stock and Berkshire pork belly with such lighter grace notes as sliced snow peas and crunchy corn.
