Maude
Celebrity chef Curtis Stone defied critic’s expectations when he opened Maude, a tiny 25-seat restaurant devoted to the concept of creating market-driven, prix-set menus based around one key ingredient, which changes monthly depending on seasonality and availability. Menus have featured everything from fennel to garlic to cherries, with his hugely popular white and black truffle menus offered in November and December. For those who are unable to score a reservation—which open on the first of each month, for the month ahead—check out Stone’s second restaurant, Gwen, a European-style butcher shop that debuted on Sunset Boulevard in June 2016.
