Spring

Charing Cross
Modern British

Skye Gyngell’s Spring is a seasonal, veggie-focused affair. The light, airy, serene space inside the gorgeous, neoclassical Somerset House matches its menu (though the latter changes often), with an atrium space decked in greenery, marble tables, and loads of natural light. The Fern Verrow leaf salad (with buttermilk dressing) has reached cult status among a certain set of aficionados, but between dishes like grouse with corn purée and roasted figs or scallops with salsify and beurre blanc, you really can't go wrong.
