Belcanto
Lisbon’s only Michelin two-star restaurant is as popular today as it was when it opened in 2012, thanks to the way chef Jose Avillez whimsically transforms ingredients both basic and exotic. The Garden of the Goose that Laid the Golden Eggs, for example, combines a soft-boiled egg with black truffle juice and bread crumbs dyed with squid ink before it’s all topped with an edible gold leaf. Sommelier Rodolfo Tristão is unsurprisingly considered among the country’s best so trust his suggestions from the restaurant’s 350-label cellar. For dinner on a weekend, it would be wise to reserve your place two months in advance, and even earlier if you want the chef’s table in the kitchen.
