In the United States, only three licenses have been granted by the Kobe Beef Federation, of which Wynn holds one. At Mizumi, the teppan and sushi restaurant with its own waterfall and private floating outdoor pagoda table, chef Devon Hashimoto does one better, serving Hokkaido Snow Beef (even rarer than Kobe), which is produced by just one farmer on the snowy island of Hokkaido in northern Japan.
