That’s soon to be remedied, thankfully, with the release of Victuals, the newest book from Ronni Lundy, noted authority on—and champion of—southern Appalachian cuisine. A beautifully photographed, thoughtful tour of the region and its food, the book is equal parts recipes and stories, tracing the cuisine’s history and giving us a glimpse into the chefs, producers, and home cooks that are looking ahead to its future.
