Award-winning Danish chef Simon Lau Cederholm opened Aquavit inside his own home on the northern shores of Lake Paranoá, where he serves an ever-changing set menu of avant-garde dishes that combine the culinary flavors of Brazil, France and Denmark. Don’t be surprised to find seared foie gras spiked with rum and pineapple or a crayfish appetizer with green mango and an oyster emulsion. Cederholm, who is also an architect, designed the entire space himself. It has a homey, cozy vibe; there are 40 seats, but try for one of the 20 on the outdoor terrace that overlooks the water.
