Fisherman's choice

Sushi-Bun is where Tokyo's fisherman, perhaps the city's most expert critics, go to sit at a counter and eat sushi off a broad orchid leaf. Located in the central fish market, Sushi-Bun opens at 5:30 a.m., after the auction, and closes at 2:30 p.m. On a recent 7 a.m. visit, fishermen were seen eating otoro (fatty tuna); anago (a sweet seawater eel); uni (sea urchin); and akagi (red ark shells). $30 for ten pieces of sushi, a slice of omelet, miso soup, and green tea. At 5-2-1-#8; Tsukiji, Chuo-ku, Tokyo; 81-03-3541-3860.
