Recipe: The Serendipity Cocktail

While we wait for the Ritz Paris to reopen its doors next year, famed bartender Colin Peter Field of the Hemingway Bar shares five of his signature cocktail recipes to replicate at home.

A Hemingway Bar signature, this light, effervescent cocktail is Field’s homage to France. Made with Calvados (an apple-based eau de vie) and Brut Champagne, "the cocktail tastes like an autumn cider from the Domfrontais region of Normandy,” says Field. “It’s my favorite cocktail."





1 branch fresh mint
1 teaspoon white sugar
¾ oz Calvados pays d'Auge VSOP, such as Christian Drouin
1 oz of clear apple juice
Brut Champagne, to top


Place a whole branch of fresh mint in a highball glass. Add the sugar, Calvados, apple juice and ice; top with Champagne.
