Necessary Luxury: The Aperol Spritz

What goes into making the perfect Venetian aperitif.

Before you order your next Bellini, consider, if you will, the spritz. Pronounced “spreetz,” this terribly fashionable aperitif combines Prosecco, a dash of sparkling water and Aperol, a bitter, Campari-like liquor. Always served on the rocks, the spritz comes with a slice of orange, maybe a twist of lemon; others contend it’s authentic only when finished with a stuffed green olive.
