Tagine 101

Marrakech’s El Fenn hotel is now offering private cooking classes, complete with a tour of the Mellah market with chef Hafid Aid Chiba. 

 He guides guests to stalls, picking up lamb, vegetables (like artichokes and peas) and spices (think cumin and turmeric). Back in the kitchen, pupils might make tagine stew and carrot-and-cumin salad. Never will you learn more about a culinary culture in just four hours.
